Healthy Breakfast Muffins

What a way to start your day, with a heathy  nutritious muffin with a dollop of your favourite Greek yoghurt & some berries!

A big thank you to one of my ladies who shared the basis of this recipe with me & with a couple of tweaks I'm ready to share with you! I hope you enjoy!

Ingredients - this made 8 muffins:

Please note 1 muffin is one serving/portion

  1. 150g porridge rolled oats
  2. 50g shelled hemp
  3. 70g peanut butter
  4. 2 Ripe bananas
  5. Tbsp Cider vinegar
  6. 100g apple - grated, sliced, stewed or chopped
  7. 150ml milk of your choice
  8. Tsp of bicarbonate soda
  9. Tsp of baking powder
  10. 30g Coconut sugar

For the Topping ( all optional & use what you fancy keeping it in moderation!

I used:

  1. 40g dried figs chopped
  2. 10g Pecan Nuts chopped
  3. 15g Mixed seeds

Method:

  1. Preheat oven to 180 Fan
  2. In a bowl mash bananas, combine milk, peanut butter & coconut sugar
  3.  In a separate bowl add the oats, bicarb & baking powder, hemp seed & cider vinegar and combine
  4. Add the banana mixture to the oat mixture & combine
  5. Fold in the apple (I chopped mine)
  6. Place into your muffin cases & then top off with your toppings
  7. Bake for about 20-25 minutes until golden or test with a skewer & if it's clean they're done! Note now I have my silicon cases I will be trying out in the air fryer next time!
  8. Serve warm with some Greek yoghurt, maybe some berries & enjoy!

Storage:

These can be frozen or stored in the a sealed container in the fridge

Carbohydrates - 27.6g

Fat - 10.6g

Protein - 7.8g
