Ingredients - this made 8 muffins:
Please note 1 muffin is one serving/portion
- 150g porridge rolled oats
- 50g shelled hemp
- 70g peanut butter
- 2 Ripe bananas
- Tbsp Cider vinegar
- 100g apple - grated, sliced, stewed or chopped
- 150ml milk of your choice
- Tsp of bicarbonate soda
- Tsp of baking powder
- 30g Coconut sugar
For the Topping ( all optional & use what you fancy keeping it in moderation!
I used:
- 40g dried figs chopped
- 10g Pecan Nuts chopped
- 15g Mixed seeds
Method:
- Preheat oven to 180 Fan
- In a bowl mash bananas, combine milk, peanut butter & coconut sugar
- In a separate bowl add the oats, bicarb & baking powder, hemp seed & cider vinegar and combine
- Add the banana mixture to the oat mixture & combine
- Fold in the apple (I chopped mine)
- Place into your muffin cases & then top off with your toppings
- Bake for about 20-25 minutes until golden or test with a skewer & if it's clean they're done! Note now I have my silicon cases I will be trying out in the air fryer next time!
- Serve warm with some Greek yoghurt, maybe some berries & enjoy!
Storage:
These can be frozen or stored in the a sealed container in the fridge
