Easy Granola

Check out this simple, healthy & nutritious granola recipe! No added sugars or additives, makes a lovely filling breakfast.

A delicious, healthy & nutritious breakfast. Keeping you fuller for longer.

Ingredients:

  1. 50G Coconut flakes (optional)
  2. 250g Mixed Seeds
  3. 100g porridge rolled oats
  4. 40g coconut oil
  5. 110g cooking apple
  6. 50g raisins (optional)
  7. 50g 70% dark chocolate
  8. Pinch of salt

Method:

  1. Pre-heat oven to 160 Fan
  2. Weigh out oats & place in a large bowl
  3.  Weigh out nuts, roughly chop them & add to the oats
  4. Weight out coconut flakes (if using) & the seeds - if it's just seeds use 190g instead
  5. Combine dry ingredients
  6. Weigh out cooking apple, (peeled) & chopped - add to a saucepan with a little water
  7. Stew down apple, adding water as necessary.
  8. Once stewed, add in oil (can be olive or rapeseed) & a pinch of salt
  9. Add apple mixture to dry ingredients & combine.
  10. Place mixture on a baking tray & flatten it out evenly.
  11. Place in oven until golden brown for about 40-50 minutes, turning every 5-20 minutes or so.
  12. Leave to completely cool.
  13. Break up & mix in chopped chocolate & raisins.
  14. Store in a kilner jar or sealed container.
  15. Weigh your portion & serve with Greek yoghurt or milk & berries.

Nutritional Info - this will easily make 7-14 portions depending on how much you have! So please check calorie information below per 100g. I'd suggest 50-65g portion

Fat (healthy fats) - 37g

Carbohydrates - 23g of which sugars 8.7g

Protein - 11g

Fibre - 7g
