Banana, Chocolate & Walnut Loaf Recipe

Here's a recipe for a lovely loaf cake even for those who may not like bananas -  you really can't taste them! They are used to give the loaf cake fibre & natural sweetness.

This one could be used as a breakfast on the go option (just as one slice with some natural 0% fat yoghurt) or as a snack "in moderation" so please check out the nutritional information, so you are aware of what energy you are taking in!

Ingredients:

3 Large ripe bananas (mashed)

3 eggs

170g butter (melted)

90ml honey

140g muesli - I used 90g oats, 25g sultanas & 25g raisins - which is a much better option than using a bought option which will be higher in sugar

50g dark chocolate - I used 90% but 70% or more would be great

100g chopped walnuts

175g self raising flour (sifted)

I also added a pinch of salt to help preserve - no baking powder required

Method:

Really easy! Just combine it all in a bowl & place in a lined loaf tin & bake @160 degree fan or 180 degrees for about 60 minutes

Nutritional Info:

Depends on how thick you slice it! But makes about 12 slices at approx 88g per slice

Per slice based on the above:

Calories - 346

Carbohydrates - 28.8g

Fat - 22.8g

Protein 6.5g
