For those of you who were following along with me in December, then you may recall me posting a couple of baked oats recipes - well, here's another variation for you to try!
Again, this oozes with yumminess and it's just like having cake!
Ingredients:
40g porridge oats
100g 0% Fat Greek natural or strained yoghurt
1 egg
1/2 tsp baking powder
Sprinkle of sweetener (I used Truvia about 1/4-1/2 tsp)
Low calorie oil spray
Handful of frozen raspberries (or any berries)
5g mixed seeds
5g chopped pecan nuts (or any unsalted nuts)
Method:
- Pre-heat oven to 180 Fan (or oven 190)
- Add oats, baking powder & sweetener in a bowl & mix
- Add the egg & yoghurt and mix to combine
- Stir in the berries
- Spray an oven proof dish using the low calorie oil spray
- Add the mixture & top with the seeds & chopped nuts
- Bake for approximately 25-30 minutes until golden and a skewer entered into the oats comes out clean. Keep an eye on the seeds & nuts to ensure they don't burn
- Allow to cool slightly
- Enjoy! I served mine with a small side of 0% Fat Greek natural yoghurt
