😋Apricot Flapjack Energy Balls
These are a great healthy snack before or after a workout, in moderation of course! Check out the nutritional info below for you're tempted to have too many!

Ingredients - Makes 20

200g dried apricots roughly chopped

100mk boiling water
-
50g dried apple
-
50g raisins
-
100g rolled oats
-
50g desiccated coconut
-
150g almonds toasted (in the oven)

1 tsp ground cinnamon
-
1 tsp almond extract
-
1 tbsp vanilla extract
-
Grated zest of lemon
-
2 tbsp honey
Method:

Place the dried apricots in a heatproof bowl and pour on the boiling water. Cover & leave to soak for 10 minutes.

Put the remaining ingredients into a food processor. Drain the apricots in a sieve over a bowl to save the water. Add the apricots to the food processor and puse until well combined. If the mixture is too dry, add a little of the apricot water at a time & pulse again.

Divide the mixture into 20 balls, and roll each ball well so they are evenly sized.

Place on a tray & refrigerate for an hour before serving. Store the energy balls in the fridge & eat within 10 days.

TO FREEZE - freeze on a baking tray so they don't stick together, then transfer to a container. Defrost in the fridge.
